An Interview With Italian Chef Renato Piccolotto

Chef Renato Piccolotto is the Executive chef of all of the Cipriani restaurants, where he proudly cooks authentic Venetian dishes, many featuring produce and herbs from the hotel’s garden. Our friend Barry Frangipane from the delicious culinary travel group Savory Adventures interviewed chef Renato on his last visit to Venice, and has been kind enough to share it with us. Chef Renato discusses how Italian food and consumer tastes have changed over the years, and gives valuable advice to new chefs beginning their journey.

Very nice interview with Renato, given my background in Italian food. I agree with him 100%. We must strive to respect and honour, in this case, Italian food when trying to duplicate it in other countries. Luckily now we have easy access to most, if not all of the ingredients, buts still thats only half of what is required.

I have a question regarding Italian cheese. My Stepfather use to buy Ricotta Salada cheese in New York’s Italian market and baked it in the oven, I think he used milk to coat it? Do you know anything about this cheese and baking it? Your reply would be greatly appreciated!
